Laurie Wall: A Chef’s Vision for The Church
Laurie Wall, an award-winning chef with years of culinary experience, is transforming a historic old church in Estevan into a fine dining haven, The Church. Drawing from her upbringing as a farmer's daughter, Laurie is deeply committed to the land and its bounty. Her culinary philosophy embraces the “100-mile menu,” featuring locally sourced meats and vegetables to support nearby farmers and celebrate Saskatchewan’s agricultural heritage.
Having traveled to 42 countries and taken cooking courses worldwide, Laurie brings global inspiration to her dishes while honoring the simplicity and authenticity of locally grown ingredients. Whether hosting occasional pop-up chef dinners, intimate cooking classes, or lively music nights with thoughtfully crafted appetizers, Laurie strives to create unforgettable experiences at The Church.
Laurie’s love of community runs deep. She believes Estevan, with its welcoming spirit and small-city charm, is the perfect place to settle down and give back. For Laurie, The Church is more than a venue—it’s her creative playground and a gathering space for connection, celebration, and culinary exploration.
